Zucchini Pickles

This recipe is designed for a 1 gallon container of pickles.

Zucchini

3-4 onions

4 cups sugar

2 cups vinegar

1 cup water

1/2 cup pickling salt

1 tsp turmeric

1.5 tsp celery seed

1.5 tsp mustard seed

5 heads dill

Thinly slice the zucchini and onions.  I use an electric meat slicer.  Boil sugar, salt, vinegar, water and spices for 5-8 minutes.  Let cool slightly and pout over zucchini, onions, and dill.  Seal and let stand at least 24 hours.
