Stuffed Peppers

Stuffed Peppers or Halupkies, one is with cabbage and the other, well, it's a stuffed green pepper.

1 cup rice

salt

4 tbls butter

1 1/2 lbs ground turkey (or beef or sausage)

1 onion

clove of garlic

1 large can crushed tomatoes     

4 large peppers or 1 head green cabbage

In a large pot steam cabbage for 20 minutes or until soft and workable.  If using peppers slice the top off and core.

Boil 2 cups of salted water, add butter.  Mix in rice, turn heat to simmer, cover and cook for 20 minutes.  Dice onion and garlic.  In a sautee pan soften onion and garlic, cook ground turkey and season as you like.  I add oregano, salt, pepper, dash of cayenne.  Add the rice when done and half of the tomato sauce.  Mix well together.  If it's a pepper place them in a baking dish, fill with rice/meat mixture and cover with remaining sauce.  If its cabbage, carefully peel off leaves and wrap a nice portion of rice/meat mixture.  Fold up, use tooth picks if necessary, and place in baking dish.  cover with remaining sauce.  Bake 45-60 minutes on 350 until hot in center.
