Pie Crust

I shouldn't have to tell you that good crust makes the pie.  I am not really a baker but do experiment with certain things.  This is so simple to make and will put your pie above those made with a crappy store bought crust.  This will make one 9"-10" crust.  Double it if you want a top cover like on a fruit pie.

1 1/3 cup SIFTED flour

1/2 tsp sea salt

1/2 cup shortening (Crisco)

3 tbls water

Alway sift your flour before measuring.  Gently scoop sifted flour into measuring cup.  Mix flour and salt in mixing bowl and add shortening.  Using a pastry knife blend together.  Add in water a little at a time as needed to bring dough together.  Work dough into a ball and wrap with wax paper and refrigerate.  Cole dough is easier to roll.  I also recommend rolling dough between two pieces of wax paper.  It will go much easier and can be used to transfer to the pie plate.
