Chicken Casear Salad
This is one of my personal favorites. Easy to make, looks good on the plate, many varieties. Drop the chicken and add salmon, tuna or other blackened fish for a healthier option.
1-2 heads romaine lettuce
Chicken breasts or fingers
Good quality croutons
Bacon, cooked and chopped
Real Parmesan cheese, not Kraft in a shaker bottle.
Dressing:
1 c canola oil
1/3 c ev olive oil
1 egg yolk
1-2 tbsp Dijon mustard
3 tbsp fresh lemon juice (buy real lemons...it's important)
2 tbsp minced garlic
a few dashes of soy sauce
salt and fresh ground black pepper to taste
1 tsp cayenne pepper or red pepper flakes
4-6 anchovy fillets ( I don't use them but real Caesar dressing has a few...if you use mash up in bowl before adding anything else)
Add everything in the order listed above and either whisk like hell or use and immersion blender or a hand blender.While that is chilling in the fridge grill or blacken chicken or other meat. I like to heavily season the chicken with Cajun or old bay then grill on a panini press or outdoor grill if the weather is nice. Slice into strips of cubes.Chop romaine and add to large bowl. Add dressing, bacon, cheese, croutons and toss. Place chicken on top and enjoy.
