Zucchini Bread

2 cups flour

2 tsp baking soda

1 tsp salt

1/4 tsp baking powder

3 tsp cinnamon

3 eggs

1 cup canola oil

1.5 cups sugar

2 cups grated zucchini

2 tsp vanilla

Combine all dry ingredients.  Mix in eggs, zucchini and oil.  Pour batter into 1 large greased pan or 2 small loaf pans.  Bake at 350 for 45 minutes.  Can also be made as a cake in a 9x13 baking pan.  Extras such as walnuts or raisins work well.  The raisins will make the bread more moist.
