So I have a recipe under soups, but this one is super quick and easy. No boiling, just croc pottery.
Ingredients
2 lbs large potatoes, peeled and cubed into 1-inch cubes (4 potatoes)
2 cups chicken broth
8 oz bacon bite-sized pieces cooked (I give you permission to cheat and buy a bag of precooked bacon bits...no judgement)
1/2 medium onion, finely chopped
2 garlic cloves minced
1 tsp salt or to taste
1 tsp ground black pepper or to taste
4 Tbsp unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
1 cup mild or sharp cheddar cheese, shredded
3/4 cup sour cream
green onions to serve
Instructions
In your crockpot with a fresh liner, add potatoes, chicken broth, cooked bacon, onion, garlic, salt, and pepper.
Cover and cook on high for 3-4 hours or on low for 6-7 hours. You will know it is done when potatoes are soft and piercable with a fork. Lightly mash some of the potatoes (optional).
Add butter, flour, milk, shredded cheese, and sour cream to the pot. Mix and combine, and let it cook for 30 minutes to an hour on low. The consistency should be thick and creamy.
Finish the soup with green onions and your favorite toppings.
