Crab Au Gratin

2 egg yolks

12 oz heavy cream

1/4 cup butter

1 large onion diced

1 stalk celery diced

salt

cayenne pepper (to taste but at least 1 tsp)

garlic powder

creole seasoning

1/4 cup flour

1/2 cup bread crumbs

1 cup shredded cheddar cheese

1 pound cooked crabmeat

1 cup shredded sharp Cheddar cheese

green onions

Directions

In a bowl, whip together the egg yolks and heavy cream.  Next melt the butter in a pan and saute the onion and celery about 5 minutes. Season with salt, cayenne pepper, garlic powder, and Creole seasoning. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally, until very tender.

Mix the flour into the saucepan, and cook and stir continuously for 5 minutes. Mix in the egg yolk mixture. Stir in the cheddar cheese until melted. Remove from heat and fold in the crabmeat and add bread crumbs. Transfer the mixture into 2 sou flee or oven safe crocks or dishes.  The idea is to have 2 separate dishes for your 2 servings.

Bake 20 minutes at 400 until bubbly and lightly browned. Remove from heat and top with the sharp cheddar cheese and green onions. Allow the cheese to melt before serving.
