Stuffed Zucchini

12 ounces pork sausage (turkey or hot works too)

1 large zucchini

1 cup bread crumbs

1/2 cup Parmesan cheese

 1/2 cups shredded Italian cheese blend

1/2 cup chopped onion

1 jar quality tomato sauce, homemade is best

2 tablespoons Italian seasoning

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 pinch garlic salt

1 can petite diced tomatoes or 1cup chopped fresh tomatoes

Brown sausage and onion in pan.  Slice zucchini lengthwise in half.  Scrape out seed and add to sausage and onions in pan.  Wrap zucchini in plastic wrap and microwave for 3-5 minutes.  Zucchini should be soft.

Add tomatoes to sausage mixture and simmer until some liquid reduces (10-15 min). 

When sausage mixture has reduced add to mixing bowl with bread crumbs, Parmesan, Italian seasoning, salt and pepper.  Mixture should become thick.

Place zucchini halves into baking pan, add mixture from bowl and top with tomato sauce.  Bake for 40 minutes at 350.  After 40 minutes top with Italian cheese blend and return to oven until cheese is melted.
