Chicken Cacciatore
I am not typically a fan of the slow cooker / crock pot for making meals. It usually means your dinner will consist of a pile of slop cooked way too long on your plate. However, there is an exception to every rule and this dinner is one of those exceptions.
2-6 chicken breasts (depends on your family size)
2-3 peppers (green, yellow, red) sliced
2 onions sliced
2 large cans crushed or petite diced tomatoes (substitute jarred pasta sauce if you want)
1 tbls minced garlic
oregano
salt/pepper
1 cup water or chicken broth
Start by spraying pam around the sides of the crock. Add chicken, boneless or bone in, either works. season chicken with salt, pepper, oregano and whatever else tickles your fancy. Add peppers, garlic, onions, broth and tomatoes. Add more oregano and spices if you wish.
Set to low or 8-10 hours depending on your crock pot. I start in the morning before work and it's done by the time I get home. It's really that simple. remove the lid for the last hour to thicken sauce if you want. Serve over white rice or noodles.
