Pumpkin Pie

1 cup sugar

2 tsp cinnamon

1 tsp ground cloves

1 tsp allspice

1/2 tsp ginger

4 eggs

3 cups fresh pumpkin

18oz evaporated milk

Cut pumpkin into large pieces and place in steamer basket.  Steam pumpkin until outer peel can be easily removed, about 15 minutes.  Mash pumpkin with a potato ricer, blender, etc.  Allow to drain in a sifter or colander with a paper towel.  3 cups should be measured after most of the water drains.    Mix all dry ingredients in your mixer bowl.  Add pumpkin, milk and eggs while mixing on a low setting.  Batter will splash!  After about 2-3 minutes pour mixture into a pie crust (home made is best).Sprinkle with cinnamon and bake at 425 for 15 minutes.  Lower temperature to 350 and bake 45 additional minutes.  Tester should come out clean in the center when done.This recipe make 2 pies.
