Zucchini Potato Casarole

2 medium zucchini

4 potatoes

1 red bell pepper

1 clove garlic

1/2 cup seasoned bread crumbs

1/4 cup olive oil

paprika, salt , pepper

Cut zucchini and potatoes in large cubes and dice pepper.  In a bowl toss all ingredients and season to taste.  Grease a casarole dish with some olive oil.  Bake at 400 for 40minutes to 1 hour stirring a few times.
