Fettuccine Alfredo

12-18 oz fettuccine

2.5 cups heavy cream

1/2 cup lemon juice

12 tbls unsalted butter

2 cups grated parmesan

salt & fresh ground pepper

Optional:

peas, grilled chicken, pancetta, parsley, basil

Boil pasta until done.  4-7 minutes.  Stir 2 cups of the cream and the lemon juice in a large skillet or sauce pot.  Add butter and cook over medium heat until all the butter is melted.  Stir often to avoid sticking or burning cream.  Add the pasta and other optional ingredients and toss in the pan.  Add remaining cream and parmesan to the pot.  Continue to toss until the sauce thickens to your liking.  Usually 2-3 minutes.
