Macaroni Salad
This is one of my more famous dishes. Little old ladies everywhere try to hunt me down and kill me for my secret macaroni salad recipe. Thought your grandmother or aunt made the best...think again. This one will not disappoint. Ingredients 1 lb macaroni
1 cup mayonnaise
1/4 cup white vinegar
2/3 cup white sugar
3 tablespoons prepared yellow mustard
2 teaspoons salt, add more to taste later
fresh ground black pepper, coupla health turns of the mill
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
2-3 grated carrots
1 lb sharp cheddar cheese, diced into small cubes.
Boil macaroni in salted water until soft, just past al dente. DO NOT RINSE, just drain.
In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrots and macaroni. Refrigerate for at least 4 hours, but preferably overnight.
